Easy Pineapple Upside Down Cake

This cake is moist and will keep at room temperature in a covered container for three or four days. Any leftover cake (leftover cake? Hah!) can be wrapped in plastic or foil and stored in the freezer for three to six months.

Beth’s Turn – June 2024

I’ve done a non-partying thing—I had a left total knee replacement in April. I’m recovering well, but it caused me to miss several things I’d rather have done instead! Getting older is definitely not for the faint of heart. Fortunately, I should be done with Physical Therapy and getting around well by the AG—which is almost upon us!
